Chocolate Chip Banana and Cherry Cake

Would you like to learn how to make this easy chocolate chip banana and cherry cake? I know it might sound a like a strange combination but the good news is it really works well.

There is a bit of a family story about the ingredients or flavors i.e. banana and cherry, as you probably guessed there would be.

We have the privilege of knowing a really amazing family. I used to work with both the mum and dad way too many years ago and all of our kids have grown up together.

I'm not really sure how this all started but we used to talk about weird food combinations e.g caviar milkshakes, ice cream with tomato sauce and banana and cherry mixed together.

I have been putting making these chocolate recipes for more than 2 years now and when my wife recently made a chocolate chip banana cake, I remembered about the fun we had years ago.

Well now is the time to experiment and discover how poorly or how well these two flavors actually worked.

So now I'm happy to report that it is a match made in heaven, as they say. Okay, I know what you might be thinking and yes it's true. I also added chocolate to the ingredients. Well I had to, after all this is a chocolate recipe website.

Chocolate Chip Banana and Cherry Cake


Ingredients 

  • 1 1/2 cups self raising flour
  • 1/2 cup LSA (linseed, sunflower and almond meal)
  • 125g unsalted butter room temperature
  • 1 cup caster sugar
  • 3 large or 4 medium sized bananas mashed
  • 2 eggs lightly beaten
  • 1/2 cup morello cherries quartered
  • 1 tsp vanilla essence
  • 1 cup chocolate chips

Method 

Let's heat your oven firstly to 180° C or 350° F and grease your round spring cake tin. Put it to one side for now.

Sift the self raising flour into a medium sized bowl.

Now grab a  large bowl and put your butter, sugar, mashed bananas, eggs, vanilla and chocolate chips. Beat all of these ingredients to combine well.

Now add the flour, LSA and cherries and stir to combine leaving some flour streaking.

Pour the chocolate chip cake batter into your cake tin and bake for up to 60 minutes.

Skewer the center of your cake to ensure it is cooked. It should come out with some crumbs sticking which means it is slightly moist - perfect.

Allow your cake to cool in the tin for 5 to 10 minutes before removing the sides. Then cool completely.

If you wish you can add some extra cherries to your cake as I have done. I just cut a few in half and place them around the perimeter of my cake before placing it in the oven.

This not only makes your cake look better it also intensifies the cherry flavors in your cake - so yum!
